A gyártási folyamat elején mindegyik Bourgeois gitárhoz külön válogatja és párosítja a faanyagokat, valamint minden szempontból ellenőrzi az összes akusztikus gitárt azok elkészülte után, bizosítva hogy esztétikailag, hangzásban és játszhatóságban mindegyikük egyaránt megfeleljen a Bourgeois színvonal követelményeinek. A gyártási folyamat alatt mindvégig követhető, amint Dana felhelyezi a húrlábat, befújja a sunburst tetőt, tisztítja a végső lakkréteget, kiválasztja és felszereli a koptatót éppúgy, ahogyan ellenőrzi azt a nyolc másik szakembert, akik éppen a készülő gitárok különféle felületein dolgoznak. Az Aged Tone (örgített színárnyalatú) széria a Bourgeois gitárok védjegye.
